Simple to Cook Pumpkin Spice Muffins (Inspired by Vegan-Ista)
Muffins are delicious and a crowd-pleaser. And “spicing” things up is a breeze. Try one of these suggestions.
Anyone can make this, baker or not, simply follow and use our easy-to-follow recipe.
If you’re a person who doesn’t mind getting their grubby hands soiled (modified from Vegan-Ista), here’s a recipe for that’s for the vegan peeps.
Ingredients to use:
- 2 cups flour (whole wheat, white whole wheat, spelt, or a mixture)
- 2.15 grams of baking powder
- 1/4 teaspoon of salt, mineral
- Sugar, either organic pure cane or turbinado (3/4 cup)
- 1 cup of almond milk (sweetened or unsweetened) 13 cup of olive oil (or olive oil infused with citrus fruits like lemon or orange) 1 teaspoon of vanilla extract
- Three tablespoons of pumpkin spice protein (more if you like it spicy!)
- 1 3/4 cups of organic, pure cane sugar or turbinado sugar
Here’s how to do it:
- Wet ingredients (excluding pumpkin spice) should be combined in a measuring cup.
- Throw all the dry stuff into a bowl and stir it up.
- Mix the wet and dry ingredients together by slowly pouring the wet mixture into the dry mixture.
- Protein, pumpkin pie spice, to taste.
- Put the batter into muffin cups.
- Bake in the oven for about 30 minutes.
- Enjoy after cooling off!
An Easy Gluten-Free and Dairy-Free Muffin Mix (Inspired from King Arthur’s Recipe)
Wanna bake something easy? Pick up a box of your preferred gluten-free, dairy-free muffin mix at the supermarket. Muffins made with pumpkin spice protein powder can be made with any muffin mix.
Ingredients to use:
Muffin Mix your favorite labels together Vegan butter or oil, to the tune of 6 teaspoons Substitute for 3 large eggs (although, of course, you can use real eggs if you like). 1 glass of non-dairy milk Three tablespoons of protein powder flavored with pumpkin pie spice or to taste.
Here’s how to do it:
Have a 375-degree oven ready. If you’re going to use butter, melt it first. Butter (or oil) can be blended in with almond milk, an egg or egg substitute, and muffin mix to make a smooth batter. Put the muffins in a muffin tin using a scoop. Put it in the oven for 18 to 22 minutes. Enjoy after cooling off!

How can you top pancakes? Pumpkin spice latte pancakes, and they’re vegan! Here’s a recipe for pancakes using pumpkin spice latte, and they sound delicious! If you’re on an Ultimate Lifestyle Transformation and trying to cut back on coffee, you can do so easily.
Ingredients to use:
Whole Wheat Flour | 1 cup
Coconut Sugar | 1-2 tablespoons
Baking Powder | 1 tablespoon
Salt | 1 teaspoon
Purium Pumpkin Spice Protein Powder | 3 tablespoons
Non-Dairy Milk | 1 cup
Apple Cider Vinegar | 1 tablespoon
Vanilla Extract | 1 teaspoon
Water | ½ cup
Instant Espresso Coffee | 1 tablespoon
Organic Pumpkin Purée | 3 tablespoons
Coconut Oil | For Pan
Here’s how to do it:
- Blend the almond milk, ACV, and vanilla extract together. Mix well and let aside for a minimum of five minutes.
- Mix instant espresso with half a cup of water that has been brought to a boil. Blend together by mixing. Reduce to a quarter cup and set aside to cool.
- Sift together the whole wheat flour and baking powder in a sizable basin. Mix in a little salt and coconut sugar. Using a whisk or fork, mix the ingredients together.
- Add Organic Pumpkin Purée to the wet mixture and blend. Then, gradually add the Coffee Mix.
- Use a rubber spatula to mix the liquid and dry components together. The batter should have some lumps but be pourable nonetheless.
- Set a big pan over medium heat. To the pan, add a thin layer of coconut oil.
- Distribute the batter in the pan in circles of varying diameters. Turn the pancake over when bubbles appear on the surface. Cook the other side until golden brown.
- Top with whatever you prefer or don’t like. The choice is yours! Enjoy!
